Today's BBQ menu:

Large Portobella mushroom caps, brushed with olive oil in which crushed garlic and onion have been soaking

Cut zucchini and summer squash lengthwise, brush with olive oil, lightly season with fresh cracked black pepper and minced Rosemary

Sweet corn in the husk, de-silked without dehusking, rewraped the husks over the kernals, soaked in a bit of water and cooked on the upper rack (put in first, before the shrooms and squashes)

Meanwhile, on the side burner, sauted a pan of sliced onions, bell peppers (yellow, red and green), and Julienne-cut celery and carrots, use a little sweet butter and olive oil, season with a dash of smoked salt, some minced fresh parsley, basil and oregano, added a splash of Chianti just before the finish to de-glaze the pan - served over the mushroom caps (almost as good as Italian sausage and peppers ,-)

In honor of Papa D'Orazio's birthday, I'm making "His" tomato sauce from scratch. It is time and labor intensive, but turns out so yummy. (A big batch for Anita and I, yes, but Beer Club is having a meeting today with a potluck dinner :D )

Foodstuffs: 2# ea ripe Roma and yellow Plum tomatoes, 1/4 c ea fresh basil, oregano, parsley, celery leaf and garlic - minced, 1/2 cup ea yellow onion and celery - diced, 1 t smoked salt, 2 t coarse ground black pepper, 4 T olive oil

Method: Using a colander dip the tomatoes a few at a time into boiling water for about 20 - 30 seconds, experience will show how long. This will blanch them so that the skins slip off easily. Once all the tomatoes have been skinned, trim the ends and crush by hand into a big bowl.

Heat the oil to medium high and sweat the garlic, onion and celery to very light golden-brown, add in the leafy herbs and wilt them a little, add in the tomatoes and salt, stir until the mass is simmering and turn heat to low. Simmer, covered, for an hour, stir occasionally. Turn off the heat and stir in the pepper, let sit for 20 minutes while you cook your favorite pasta.

What I normally do, though, is after the sauce is cooked, I'll put in a few each of partially cooked: beef steak (thin slices, rolled), hot and sweet Italian sausage and chicken (thighs and drumsticks) and simmer until the meats are done.

I'm currently eating Combos. Yes, the bite-sized pretzel snacks with a peanut butter interior (tho nowadays they have all kind of interiors). Today I got the Jalapeño Cheddar flavor. I was so excited to try this new zesty flavor. I open the bag, only to discover that I had bought the inferior "cracker" type instead. See, they have an alternate to the pretzel shell; the "cracker shell" and it's infinitely inferior to the pretzel. The problem is that they have some flavors that have both the pretzel and cracker shell, with trivial differences in bagging. So here I thought I was buying the pretzel type and I ended up with the goddamn "cracker" type.
So I pulled one of those little generic, snack negroes, out of the bag, held it towards the heavens, shouted and cursed it, then shattered it on the ground. Cursing it once again. :eusa_shifty:

All that I can say for certain about Greek cuisine is that salads are good with feta cheese, better than any greens with shredded American/welfare cheese, Greek rice pilaf is pretty darn good, Greek beer is also pretty darn good, and that I really, really, really like souvlaki. :eek:

The advantages of living by a good Greek restaurant, owned by a guy named Ilias (and his wife Maggie) (:D, I think Ilias is an immigrant to the New World and quickly went native by marrying a local girl, something I noticed with my coworker from Espana named Carlos :D), are pretty numerable.... I like to leer at the comely and curvy waitresses, a couple of whom I know are Greek, which probably makes me a bit of perv. :P
