I ate the cheese with the salsa and the grapes on the side. It would've been even better with some bruschetta and a glass of red wine. Yummm.

Well, I usually don't try to be too "European" with my food, but I made some whole-wheat cinnamon rolls, and never ate them, so I ended up making bread pudding out of them, and now I'm eating it for breakfast.

My nonnie used to and mom does make this. We dredge the freshly fried dough in cinnamon sugar, eat them hot from the pot. Call it Pizza Freetz...

My mom would make it once a month in the confines of my dad's life schedule (Sunday was Bacon day, Saturday was Pizza day, Friday was Fish and Chips or Italian Grinders, Thursday was Chili and Rice, Spaghetti and Sauce, Pork Chops and Green Beans or New England Boiled Dinner...)

We ate a wide variety, but some items had a regular rotation in the schedule. :thumb001:

Saturday Jal Fraize Curry with rice.
Sunday roast joint, pots, greens.

Pork roll stuffed with fennel, olives and rosemary



INGREDIENTS for 4-6 people

* 1kg pork shoulder. Ask your butcher to prepare it for stuffing
* 2 glasses dry white wine
* olive oil, salt pepper

Stuffing

* 1 clove garlic
* 2 tbsp grated parmesan
* 2 tbsp green olives chopped
* 2 tbsp rosemary
* 1 tbsp parsley
* 6 tbsp bread crumbs (from 2-3 slices of stale bread whizzed in a food processonr)
* 1 fennel bulb, chopped

DIRECTIONS

1. Prepare the stuffing:in a large bowl combine all the ingredients together with 1-2 tbsp of olive oil.
2. Brush the inside of the pork with olive oil and some pepper and spread the stuffing evenly, mainly in the centre, leaving a wide border around it.
3. Roll up the pork and secure with butcher’s string.
4. In a large pan heat some olive oil and sear the meat from all sides.
5. Add wine, lower temperature to medium and simmer with the lid on for 1.5 hrs or until meat is nice and soft.
6. Remove the roll from the pan and place it on a baking tray and roast it in a 200 oC oven for 10 minutes to get the nice golden colour of the pic.
7. Let it stand for a little bit before slicing.
8. You can use the pan juices to make a sauce and serve it with the meat and some rice/pasta/roast potatoes.

Eggplant Parmesan, which I made yesterday (had baked chicken while cooking this).

I slice the eggplant about 1/4" thick and salt it lightly, let it "sweat" in a colander for a couple of hours. Dry the slices, dust them with flour, dip in scrambled eggs and then lightly fry it in olive oil.

Layer of eggplant (in a lightly oiled baking pan), spread over with sauce (diced tomatoes and Portobella mushrooms, Italian sausage, garlic, onion, basil, oregano, crushed tomatoes and red wine), sprinkle with finely shredded Mozzarella and Parmesan cheese, repeat (4 layers of eggplant). Last layer of eggplant has no sauce, but has Mozzarella, Parmesan, Asiago and Roman cheeses. Bake at 350F for 40 - 45 minutes (until cheese is melty and golden brown).

I just had a toasted bacon, egg and tomato - extra tomato - sarnie. I await the boiling of the coffee in the espresso pot. For some reason, I wouldn't usually finish a huge sandwich like that, but I did and still feel empty.

I've just had my regular Friday breakfast with my colleagues - 2 x bacon, sausage, mushrooms, 2 runny eggs, toast and baked beans. Good for the rest of the day now! :)

More importantly, last night I made some cabbage, potato, carrot and onion soup with salt, garlic and pepper. It was one of my greatest creations in the kitchen... I cook very simple dishes.

It is a Northern Italian dish typical of the montainous area, but it exists in the whole Italy, though in general in central Italy it is made with tomato souce and sausages (Roman polenta). It is a sort of ritual when outside is cold. I prefer the northern version, though the Abruzzese/Roman version is not bad...

Decided to throw a little something together for dinner tonight, as I got home an hour earlier than usual....

1 1/2# thinly sliced pork loin chops (12 at about 2 oz each), 1 large sweet white onion - diced, 8 oz Portabella mushrooms - diced, 1 T garlic - minced, garlic powder, lemon pepper, 3 T each olive oil & sweet butter, 1/2 c red wine, 3 T cornstarch, 1 T confectioner's sugar, 1/2 c cold water

Season the pork lightly with garlic powder and lemon pepper. Bring a heavy saute pan to high heat and then add in the oil and butter, stir so the butter melts, but does not brown. Sear the pork for 2 minutes on each side (thin pork fully cooks pretty quickly, depending upon pan size, this will be done 4 - 6 pieces at a time) and set aside in a warm, covered bowl. Toss the onion, mushrooms and garlic into the pan dripping, stir at high for 3 minutes, add the wine and then turn to medium, cover and let cook for 5 - 6 minutes. Put the pork and any juices into the pan (pork over the onion-mushroom mix), cover, turn to low and simmer 10 - 12 minutes. Mix the cornstarch and confectioner's sugar into the water, remove the pork to the warming dish, turn the heat back to high and stir the mix into the contents of the pan. After 2 minutes, turn to medium and let simmer for 5 - 6 minutes to thicken slightly...stir so it doesn't scorch.

Served the pork and sauce over egg noodles...steamed carrots and broccoli seasoned with Italian salad dressing as the side dish.

We had home made Zinfandel wine to drink

I love green beans, but I like to change up the flavor a little beyond the usual steaming and seasoning with some butter, pepper and salt.

Ingredients: 4 thick slices of maple-cured bacon, 2 c green beans - cut into 1" long pieces, 1 Granny Smith apple - peeled, cored and diced, 1/4 c water, 2 T lemon juice, 4 T maple syrup

Fry bacon until crisp (BUT not blackened), take off the heat and set aside on paper towel to drain. Strain the drippings through a coffee filter into a heat safe bowl (like a Pyrex custard cup), put 4 T of the bacon drippings back into the reheated pan (use vegetable oil if not enough). Put in the green beans and stir fry for 2 - 3 min, add in the apple pieces, stir fry for 2 - 3 min, add in the water, turn down the heat to low and let steam for 5 - 6 min. Turn off the heat and stir to coat with the lemon and maple. Crumble the bacon and stir the bits into the beans and apple.

Makes 4 servings.

We are having grilled beefsteak for dinner with baked potato and the green beans as above.

Got to wonder where you find the time to cook gourmet meals everyday.

Part of it is I think ahead to what I have in the house as I'm driving home from work. The grocery is right on the way, so it's a quick in and out if I decide I want something else. Most usually I stop for a fresh cut of meat, poultry or fish, maybe some mushrooms or vegetables or potherbs I want, but don;t have.

My prep time is usually 10 - 20 minutes, and the cooking time does vary, but I like cooking things that can take care of themselves in a slow simmer or roasting in the oven kind of way.

Also, I slice meats thin, so they cook through more quickly. I do prep work for tomorrow's meal, while today's is cooking. Cut veggies will keep fresh for a day or two in lightly salted water, in the fridge.

Or, like the chili, I mix the ingredients the night before in the slow cooker.

I have 3 slow cookers and a rice/vegetable steamer...they are a big help.

I also use pressure cookers (have 2); 10 minutes prep time and 20 - 25 minutes cooking time for beef stew in one of those.

I've been cooking a long time (mom and the grandmas made sure I started learning as soon as me and the step stool were tall enough, and I understood about HOT).

It helps that my wife is also an excellent cook. On the days when she is feeling well, I can look forward to more good food.

Another trick is using the food saver, vacuum sealer. The pouches are microwaveable. Set up your portions of veggies, seal, toss in the freezer.

While other things are cooking, zap these in the micro-wave

Many things you can do to maximize the food output while using the time you have.
