Probably they were semitic tribes + anatolian remnants of the bronze age collapse. The Spartans didn't mix in with the people they conquered, and it's not certain when they came to Sparta, whether they were pre bronze age collapse or what.
It's a good question, but I am not sure you can sort it out for sure except to say there's been a whole lot of mixing. Lebanese christians today might be more greek than greece is, for example.
Athenian group is still around but I am not sure how much they count as being ancient greek. They were really everyone else's bitches through history, with their only power coming through numbers. The others are basically gone but I'm sure there's remnants here and there.
