Limpets with Afonso sauce is of the most famed and delicious titbits of the Azores. There are several variations of the recipe. Some may even have white wine as an ingredient. However, this version is my favourite.

Limpets with Afonso sauce recipe is one of the most delicious examples of the Azorean gastronomy. The archipelago food is highly influenced by the rich resources of the Atlantic. Therefore, fresh fish and seafood are the main highlights.

Ingredients

  • 1 kg limpets
  • 1 onion
  • 4 cloves of garlic
  • 1 dl olive oil
  • 1 branch of parsley
  • 1 tsp. butter
  • 2 egg-yolks
  • 1 lemon (juice)
  • pepper to season



Instructions

Peel the onion and the garlic. Chop these ingredients with the parsley, previously washed.
Sauté these ingredients in the olive oil and the butter. Season with pepper.
Add the limpets, previously washed and cleaned. Let it boil and remove the limpets from the heat. Beat the egg-yolks and add them to the sauce, stirring.
Then, add the lemon juice and serve the Limpets with Afonso sauce recipe.
