Does this imply that what we know as the Mediterranean head-shape in Caucasoids is actually the result of Sub-Saharan African admixture in Mediterranean populations (as no non-African admixed Caucasoid population exhibits this trait)?

No, but as Coon noted in Races of Europe, certain branches of the Mediterranean Race (think of Gracile Meds for example, not Atlanto-Meds) have features slightly transitional to Negroid, just as some branches of the Negroid Race have features slightly transitional to Caucasoid. (Think Sahelians, and even Nilotics to a degree.). The Map of African admixture is flawed because it does not distinguish between North African and sub-Saharan so most of that is actually North African Caucasoid admixture. SSA in Europe is only at trace levels.

I'd expect more transitional traits like prognathism in Meds if this was the case but I think it'd worth asking the question.

There is prognathism in some Meds, but is a minority. Anyway, when I say transitional I mean only very slightly transitional.

Probably not, because West African admixture is not above 1% in any Europeans. Also prognathism isn't exclusively Negroid, it's just much rarer in Caucasoids, but present sometimes, and even present in some Mongoloids.
