    Which I love on salads, esp with tomatoes, and olives, or with roasted red peppers, and on nice bread!

    Pecorino Romano is another favorite:

    As well as casizolu:


    Despite the name that might make one think it is produced in rome, most pecorino romano is made in sardinia.
    I love a good pecorino to top off a nice pasta, or in a risotto.

    Casizolu is good as a nice table cheese.

    I honestly love all cheeses depending on my mood with maybe the exception of Munster, yet I like Brie which has a similar flavor but mellower.
    I also like Swiss Vacherin and Raclette cheeses but they are hard to find in the US.

    The most recognizable Catalan one is the mató.

    Mató [məˈto] is a Catalan fresh cheese made from cows' or goats' milk, with no salt added. It is usually served with honey, as a dessert, called mel i mató.

    It is quite similar to non-industrial variants of Italian ricotta, brull (in Maestrat), brossat (in Occitania), brocciu (in Corsica), or curd cheese.

    Mató already appeared in the Sent Soví, a Catalan cookbook from the 14th century. It was very popular during the Middle Ages, when it was made plain or scented with orange flowers.
