Mixed Jew who looks 100% Ashkenazi?

I know this girl who is part Jewish, but looking at her she looks fully Ashkenazi Jew. she said she gets told that quite often. Her Jewish ancestry comes from her maternal grandfather. She has clear semitic features and also the semitic smile and skull shape. the eyes are a dead giveaway though. I'm wondering how such a miniscule part of her genetic makeup had such an effect? she looked more like her father when she was younger, but as she got older she became darker and more semitic looking. she's 23 now. her mother looks the same as she does, her father looks pretty pan European.

Genetically what went on here? did she get a heap of genes from her great grandfather or something? would she score more ashkenazi on a 23andme DNA test than her brother (who looks more like his father?)
