How many Muslim Albanians became Turks? The opposite definitely happened in an Muslim majority Ottoman Albania with intermarriages. So the ancestors of the Turk who married an Albanian girl became Albanians.

And how many Muslim Greeks you know, because there are none.

The only example of something like this is some famous Ottoman guy whose name I can't remember. His parents were killed by Turks in the Massacre of Chios, and since he was an orphan the Turks took him and he was raised in Istanbul, turned out to be a fairly famous artist or something. He was fully Greek.
