What is the most famous "classic music" piece in Serbia.. or who is the greatest Serbian classic music composer ?.. I m not interested in pop music of the last 70 years...

There was a lot of stagnation in the high arts/culture during Ottoman rule so there is probably very little (if anything) completely parallel to the Western cultural periods during this time. However, I'd say that the most famous composer closest to classical music would be Stevan Mokranjac:

There are also numerous composers using some sort of urban/folkish fusion, like this (but I'm not sure if it's what you're looking for):
