Crimea and the Carpathians would probably be nice. Much of it is endless corn fields as you say though, but then again a lot of areas of Europe have become like that.

Indeed, but the landscape looks good. The real Ukrainians are in the NW of the country though, the SE is Russian now.

The Crimea is awesome, you can go look at Genoese Fortresses in Balaklava. I have been there.

I didn't like Kiev so much.

In fact it's with cold weather when Spain is really interesting. When it's hot in the summer, there are too many tourists.
