I've had a quick google, and while not having found anything solid, it seems that "Parker" (derived from the occupation of park keeping) as Jewish surname is the result of Jews of yesteryear adopting an Anglo (derived from Old French) surname due to its relative phonetic faithfulness to similar sounding Jewish surnames..
