Hmm... the tercios and Ottomans never met in the field as their holdings never shared a border so a prediction of who would win a war is, potentially, a bit futile. Their wars were mainly naval wars and their navies were equally matched with the Spanish winning out in technology, the Ottomans in numbers. If there were any land encounters that simply don't cross my mind right now: let me know.

The Dutch-Spanish battles were often much more interesting. Particularly those after Prince Maurice's military reforms. Nieuwpoort comes to mind. Most battles were sieges in that war (the Eighty Years' War) which often ended in favour of those who controlled the surrounding countryside as well as the navigable waterways. But if we're talking around the year 1600, then the Ottomans would have won as the Spanish would have been fighting the Dutch, England and the Ottomans at the same time and Maurice's invasion of Flanders would have had a very different outcome (and the religious situation in France would have been blown up again barely 2 years after it ended). This would have become a general European war and something much akin to the Thirty Years' War that would come ten years later and a total blood bath.

Operational coordination would have been different though as communications would have been problematic and Dutch-Ottoman Relations would not be officially arranged until 1609. Man... talk about an interesting shit show ! I can imagine the Spanish suing for peace with the Dutch and English just to get them off their backs (give them independence, Flanders and drop the whole Ireland thing.. just so they could focus on the Ottomans).
