I only ever met one "full blooded" Ashkenazi who had blonde hair and blue eyes but he looked mostly levantine.

"Full blooded" Ashkenazi are quite light but with odd features.

Yeah there's a difference between Jews in Europe and those on other continents, they must've had to mix with the locals at some point
