For women I successfully perceive 'femme' lesbianism, bisexuality or openness to bisexuality in the eyes, facial expression, lips, mouth, possibly voice and demeanour. They may seem curious, open, interested, lusty, slightly apprehensive.
But most women are open to bisexuality in the right circumstances, even seemingly straight ones;
women's sexuality can be very fluid unlike men's sexuality.

For men it is more difficult for me, especially because I am around a lot of flamboyant, fashionable, well-groomed gays.
For the corresponding subset of fashionable closeted or discreet gays (NOT bears, construction workers, bikers, soldiers),
I would pay attention to the demeanour, especially around other attractive men and women.
I would pay attention to appearance, shyness, gentleness, tenderness, nervousness,
and softness in general (of the appearance, voice, mannerism, etc).
But then I might confuse some shy soft-spoken metrosexuals for gays.

It's debated what the cause of homosexuality is but if a lesbian I used to be friends with was onto something, which is the idea that it's caused by severe hormonal imbalance, that could lead to some behavioral differences. This woman in particular had extremely high testosterone for a woman and was mean and aggressive constantly lol. I know one female to male transgender who said that excess testosterone made them "notice women in a big way". And obviously sex hormones are linked to behavior... just an idea. I don't really know what the cause is and I don't care to debate it, but it's one theory. My gaydar is probably like a 7.5 but this is also partly due to the fact that I've learned to not make assumptions about people in either direction.

I have a friend who is dating some alt-right neo-Nazi type... she's Jewish, to boot. Anyway, I thought this dude would be really "normal" in all of the typical conservative ways given the online presence he chooses to have. Until she called me to cry for two hours about going through his computer and seeing that he was looking up femboy porn.

So... yeah, you definitely can't always tell. Lmfao.
