    Is there?
    EG:
    Like Germans, English, Russians tend to exterminate
    while
    Portuguese, Spanish, Greeks (Helots, Spartans etc) etc and (even Arabs) tend to enslave?

    It could be the type of societies. The Spanish and Portuguese needed a large population for their settlements, but didn't bring many of the common people with them. So they used slaves to form the basis of their colonial societies, and instituted caste systems. Arabs on the other-hand seem more bound by religion than race. So they probably saw no reason to exterminate Africans. Most English settlements were populated by English so Africans were more expendable, until the English and Americans discovered how profitable slaves were of course. The same holds true with the Amerindians, who in English and American societies were pushed out and exterminated, while in Spanish and Portuguese societies used as the base population. As for Germans, Greeks and Russians, I have no idea on their historical involvements with Africans.

    Greeks treated ancient Thracians and other Illyrians as inferior and enslaved them.
    Germans exterminated slavs and jews.
