Do you understand that if there are certain rules we know are correct we can extend it's application? In Evolutionary theory we don't only extended known rules, we have more observable evidence to point at it's occurrence over time. It's really an ingenuous and beautiful explanation (God by the way done't explain nothing, which isn't our current topic, but we can open it up if you want).

Eyes evolved very early, long before mammals even did (fish also have eyes).

Of course we can. Some species of Cnidarians, one of the most primitive animals, are known for having an early stage of specialization of some of their nervous cells to get differences between light and dark, what can be considered an early and primitive eye. Complex eyes as ours took millions of years to be developed.
