It would be interesting to see to which recipes these eggs go
I absolutely love a tortilla de patatas or a nice egg pasta with bolognese, but I can't stand to eat fried eggs or pure omelletes.

I can speak for central Europe: a lot of it goes into baked goods, mayonnaise, fried or hard-boiled eggs get served with potatoes and various sauces poured over it such as spinach, eggs sometimes go in soup, in casseroles, and of course they're utterly indispensable for frying schnitzels, fish, meatballs and anything else breaded and even remotely similar. It amounts for a lot of egg consumption if your family fries at least once a week and bakes as well, egg whites are used even more extensively in sweet foods and confectionery.
