Vaquero comes from Spanish Vaca, which in turn comes from Latin Vacca (cow). Nothing Arab about it.

The cowboy culture has its origins in the Spanish colonization of Western Andalusia and Extremadura. After the Moors were driven out, the lands became desserted and were distributed to the nobility, military orders and soldiers who became big land owners and used it to the extensive production of crops and livestock (the Hacienda and Rancho system, later exported to the Americas). And the cow breeds used in America and Andalusia came from cows from Asturias, Cantabria and Galicia. The only partially Arab in all this is the Andalusian horse (antecessor of the Mustang), created by interbreeding the best Arab, Berber and Iberian horses.
