I already had oysters and foie gras but it's not really "cuisine" since there is no cooking involved (foie gras can be cooked though).

Dinner for Christmas Eve is a carp. Usually fried one, with potato salad.
But it is quiet "new" tradition, ca. 100 years old. Sooner, the traditional food for Christmas differs by the regions.
Nevertheless, in every Czech families are baking cookies of various kinds. One of the most popular Christmas cookies here, are vanilla crescents - see the picture

Of course with the Mirto leaves!!! Can't find this variety of Myrtle outside the mediterranean.... I love it... and to drink Mirto also from the berries of this wonderful plant! :)

my family eats fish on christmas eve and fasts (no eggs, milk, butter, meat etc.) and on christmas day usually roasted pork meat and salad self made bread and some cake
