In the magical land of Quebec there exists a type of fast food known as Poutine, consisting of french fries, cheese curds and and gravy mixed together!:embarrassed The taste is sinfully heavenly although every other American I've informed of its existence was left horror struck.
Am drooling for this dish right now, but am afraid I'd have to jump the border for the authentic stuff. Feta is a reasonable substitute for squeaky curds though, when I'm settling for USA style faux-poutine.

Braised lamb shank. Few restaurants have the patience these days to cook it properly. TIME (not thyme) is the most important factor in cooking lamb shanks properly. They can NOT be hurried but must be cooked SLOWLY. Yes, they will come out just as falling-off-the-bone tender if cooked in a pressure cooker, but the flavor does not have the time to develop.
I give them 12 hours on LOW in a slow cooker.
