I can't even FIND picture of my favorite dessert. It's Nesselrode pudding. I have had it twice in my life, in 1955 and 2010 and never expect to have it again because it is so hard to make. If made from scratch, it requires 22 pans (sic !). A few can be saved by using canned chestnut puree.

It is a nougat-like (but smoother and silkier) pudding based on chestnut puree and containing candied fruits. Whoever Count Nesselrode was, I find it hard to believe that he deserved anything THAT good !

Im pretty sure its Pastel de Tentugal. The filling is not apricot, its actually thick and custard-like, made with egg yolks and sugar.
