He is quite light for a georgian, I guess Borreby + something else, he does not have the typical borreby features.

agreed, his head shape is where I see borreby

I can't really pin down what else is in him though other than some sort of Taurid in the nose

I don't see it.

From what I know about Georgians he doesn't look very typical. What do you think?

definitely not typical, but Ive seen some of my dads friends with the same (cromagnoform?) head shape/look so I wouldn't call it rare

Georgians are pretty varied to my eyes.

Some look Southeast European and could easily pass as Bulgarians while others are distinctively (South) Caucasian looking.

This might explain it:

Shalikashvili was a scion of the medieval Georgian noble house of Shalikashvili. His father, Prince Dimitri Shalikashvili (1896–1978), born in Gurjaani[5] served in the army of Imperial Russia; Dimitri was a grandson of Russian general Dmitry Staroselsky. Shalikashvili's mother was countess Maria Rüdiger-Beliaev..............Maria; she was Polish and of part German ancestry
