Beet and Carrot Soup

A Simple Lentil Soup

Serves 12, as a soup course

Ingredients:
1 cup red lentils, rinsed and picked over for small stones
2-3 cloves garlic, minced
1 onion, chopped
1 carrot, peeled and chopped
2 celery stalks or 3 celery hearts, chopped
12 cups (or three 32-ounce boxes) vegetable stock or chicken stock
¼ cup brown rice, barley, farro or other whole grain
1½ cups chopped tomatoes
1 teaspoon dried oregano
½ teaspoon turmeric
1 bunch fresh spinach, swiss chard, kale or collard greens, cut into thin slivers, if desired
½ cup chopped fresh parsley or basil

Directions:
Place all ingredients in a large soup pot. Bring to a boil, then turn heat to low, and cook, covered, for about 1 hour, or until lentils are soft. Season with salt and pepper.

I've made this anti-cancer soup lots of times for friends with cancer. Freezes well.

Brussels sprout soup recipe

Ingredients for 4 people
20 pieces of Brussels sprouts

1 piece of leek

1 carrot

3 pinches of sea or Himalayan salt

2 tablespoons unrefined oil of your choice

(not necessary)

700 ml . water

Preparation

* Put 2 tablespoons oil of your choice in the pot .

* Clean the leek and cut it into crescents . Then place it in the pot .

* Clean the carrots , cut into quarters and place it in a pot on the leek crescents.

* Clean the Brussels sprouts pieces and place them in a pot on the carrot .

* Add 700 ml . water and allow to boil for 5-7 minutes .

*3 minutes before it is cooked, add the salt .

*Because of the abundance of anti-cancer substances, Brussels sprout is considered as a “natural fighter” against cancer. It strengthens the natural defense mechanism of the body and prevents the growth and development of tumors in patients already diagnosed with cancer.

*Many studies have shown that Brussels sprout is particularly useful in preventing the occurrence of cancer, because it contains chemicals that act successfully against this disease. It is believed that consumption of Brussels sprouts efficiently prevents colon cancer.

Mixed Vegetable Soup with Wheat Berries and Baby Spinach Recipe

Ingredients
1 tablespoons extra-virgin olive oil
2 stalks celery, thinly sliced
1 medium onion, diced
1 medium leek, white and pale green parts only, washed thoroughly and thinly sliced
1 cup wheat berries or farro
1 tablespoon tomato paste
2 quarts vegetable broth
One 15-ounce can borlotti or other beans, rinsed and drained
2 sprigs fresh thyme or 1 teaspoon dried thyme
1 stem fresh basil
2 large carrots, halved lengthwise and sliced crosswise ¼" thick
4 handfuls of baby spinach (any leafy green vegetable will work such as kale, swiss chard, just cut into bite size pieces)

Directions
Heat oil in soup pot. Add celery, onion and leek and cook over medium heat until softened, about 5 minutes. Add wheat berries and tomato paste and cook, stirring, until the grains are coated and shiny, about 30 seconds. Add 1 quart of the broth, the beans, the thyme and basil, and bring to a boil. Simmer over low heat for 30 minutes.
Add carrots and the remaining broth. Cover and cook over low heat until the carrots are tender, about 30 minutes. Add spinach, and cook until just wilted (heartier leafy green vegetables will take slightly longer to cook). Remove thyme branch and wilted basil. Season with salt and pepper.
