I am guessing the average Ethiopian has about 20-40% Caucasian Ancestry originating from the middle east.

"caucasian" doesn't mean anything. Ethiopians of Cushitic and Semitic background are between 38 and 52% Eurasian. This Eurasian ancestry is mostly Ancient Near Eastern with several basal Eurasian affinities.
