Alright, a backstory.

I'm 1/8 Italian. Due to a series of events, I don't know what part of Italy my ancestors immigrated from. I know how their last name is pronounced, but other than that I'm not sure of anything.

I'm wondering if I'm able to find out through DNA testing (even if the only thing I know is how the last name is pronounced.)

No, 23andme's ancestry composition doesn't break down the Italian category...However, you'll be matched with cousins and distant cousins in their database using 23andme's Relative Finder feature, and you might be able to find out where a lot of your relatives in the database are from if they've decided to reveal any details on their family locations. For example you may have a relative whose birthplace is in Italy on the list, and if they've decided to go into further detail, you may find what specific region or town their family hails from, and additional surname info, etc. Thus giving you the perogative to make an educated guess concerning where specifically your ancestors in Italy are from if multiple relatives in the database are from the same specific region.
