I would say Anglo-saxon.

Eyes look too dark to be pure anglo-saxon. I also don't think her features look overall rough enough for that classification.

All true anglo-saxons eyes are pure blue or light-mixed. Her eyes look mixed but darker, maybe hazel, rather than light-mixed.
