Spain just almost touches Morocco. Sicily is a stone's throw from Tunisia. But the North African coast slopes significantly downward, so the next closest part of Greece to North Africa -- Crete -- is significantly further away, let alone the mainland.

This, in my view, explains the disparity better than relying on historical migrations such as Moorish conquests.

I don't think it is due to Moors really. I think that it makes sense to think that Iberia and North Africa always had contact in prehistoric times, and that one of the original Sicilian peoples (Sicanians, most likely) had passed through North Africa before coming to Sicily, as a similar people were also present in Malta and on Pantelleria and supposedly had connections to Iberia.
