They surveyed the following areas, and the following haplogroups I have added up, based on the probability they all arrived via Normans:

I1b1b
I1b2a

West Sicily:
Trapani: 15.15%
Mazara del Vallo: 5.56%
Santa Ninfa: 3.23%
Alcamo: 12.50%
Caccamo: 31.25%

East Sicily:
Sciacca: 3.57%
Piazza Armerina: 7.14%
Troina: 0%
Ragusa: 0%


Study reported average, for adding up haplogroup I:
West: 12.3%
East: 2.63%


MOORISH:
I added up J1 and E-M81.


West Sicily:
Trapani: 3.03%
Mazara del Vallo: 0%
Santa Ninfa: 9.68%
Alcamo: 4.17%
Caccamo: 12.50%

East Sicily:
Sciacca: 3.57%
Piazza Armerina: 7.14%
Troina: 3.33%
Ragusa: 10.71%


Study reported average, for adding up haplogroup J1 and E-M81:
West: 5.74%
East: 6.14%

My grandfather on my mother's side had blue eyes, perhaps from Norman geans?

You can't go by coloring. I've seen light pigmented Sicilians having more MENA input than some darker skinned ones and vice versa.
