What is typically Russian? I know only Wodka is a typicall Russian drink. Any non-alcoholic beverages and also food? And where in Austria can you get it? Lately I love to drink Kefir, is Kefir Russian? Its a milk product.

I have to admit, I've had (authentic) russian dishes before, and they weren't my favorite. They do have amazing dessert dishes though. Some of my favorite are
Syrniki
Basically a fried pancake. My mom used to make it a lot when I was a kid.

Chak Chak. Kinda like munchkin doughnuts, but not lol

Sour milk doesn't have bacteria required for proper fermentation process. That's main difference from kefir.

Interesting thread. Russia is a big country with so many ethnic groups and of course with a rich tradition in culinary and beveragge. From what i have see now, this vatrushkas seems interesting. With what are they filled?
About the discussion of yogurt, we use to produce(because we produce in home yogurt, we don't buy it) yogurt from the milk of the cow. For me the best yogurt is produced by the milk of the sheep. We use an espressione, can be cut with the knife.

Nice. But why not salt but sugar? cottage cheese+salt+onion/garlic/other grasses like nettle is another receipt for closed pies. but with sugar/honey is for opened ones
BTW, which region in Russia produce the best vodka? by definition vodka is just highly refined (purified?) spirit 40% or 56% in neutral water.
for long time ewery sort of russian vodka corresponds to this standart. but exists different types of additions like citric acid, glucose, glycerol and its combinations make ewery sort slightly different. you may make eperiment - add these components in bad vodka and it will be better taste.

If you want to look smart, at least try to do some research on the topic before you post. Kefir is very different from any other fermented milk products because it's produced using special kefir grains, mix of yeast and few types of bacteria. The fermentation agent in kefir is totally different from yogurts so making kefir isn't as trivial task.

Probably the fermentation of kefir bacterias is the proper one... Thats what you said, mate. Just it is not true and I decided to correct you.

Proper is determined by desired result. If you want to get kefir at the end you need special substance, it's impossible to make it by ordinary fermentation.

It looks very similar to a dish we have in the Balkans: tarator. But it has a thicker consistency and doesn't have ham in it. It's really tasty.

There are no strict rules on okroshka, you can make it thicker or lighter and change ingredients all you want.

i think the main difference between okroshka and tarator is the absence of garlic. also okroshka is made, usually, with sparkling water :)

kefir yes

we also have that..it's called boza or braga but it tastes quite different. it's not really kvas :)

Kvass or whey. Kefir is too thick for okroshka for my opinion, but many people like with kefir. In Northern Caucausus they do it with mineral water sometimes. Some add mustard, some dont want to make it hot. I tried to make okroshka with non-alkohol beer - it was good result. In rural area also tried okroshka on beetroot (red) kvass and on rheum drink.
