So I'm half Ashkenazi half Germanic and on every gedmatch test I get about 35% Cypriot. Why is this? Does Cypriot represent non-arab Levantine or some kind of Greek ancestry? I'm kind of confused.

Maybe you have Greek/Roman ancestry back to the time or Philistine ,
from history i know that Jews mixed with Philistines
Also Greeks had many colonies there

It is merely your mixed autosomal placement the algorithms put you as through their population sample database.
