As I can't. It is an occupation, but I simply can't figure out what is written.

It is my 3 x Great Grandfather's occupation. In 1871 he was a whatever this is, 1881 a Labourer and in 1891 a Nail maker.... if that helps? :D

There's a symbol '&' in the middle clearly.
Try to enhance the image with photoshop or similar software, can be helpful.

"Victualler"
This is the very first time I see this word.
The dots above the i's are clear, as are clear the initial L and the final d in the 2nd word, the pairs 'ct' and 'll' in the last word, and 'ann' in the 1st word. The initial letter in the 1st word looks like J or T, the initial letter in the last word seems to be a V or an old shape S. After looking possible combinations in an online dictionary (http://east.merriam-webster.com/), I think Treffie has solved it, "Tanner & Licensed Victualler".

Victualling; Grandad Beorny obtains booze.
Tanning; Grandad Beorny pisses the carefully processed booze on some cow hides. :D
Was victualler a common occupation? I found one of my ancestors was a victualler as well. Another was a "malt seller" or something similar. They loved the sauce back then.
