By this I mean, apart from the Amerindian ancestry in some French Canadians, which is usually below 10%, do French Canadians typically have non-French European ancestry too, or are they 100% French?

I've come across a few with distant Prussian and Irish ancestry.

Irish is what I expected, since some of them were not accepted into English/Scottish Canadian areas because of being Catholic. So many of them ended up mixed in with the French.

I know they have Irish and highly likely English and Scottish as well. A lot of French-Canadian families adopted Irish children who were orphaned during the famine years.

Whatever it might be, it predates their settlement in Quebec and it's mostly likely entirely British Isles. Otherwise, I'm pretty sure French Canadians don't have any significant foreign ancestry that is common to the entire population. Quebecois/Francophones are very elitist and separatist, we've held two referendums that asked voters if Quebec should secede from Canada and gain sovereignty but they've both failed. The second one was extremely close -- 50.58% ended up voting for Quebec to stay.

They're generally more French than the French from France due to huge numbers of immigrants from Italy and Iberia who came to France essentially in the 1880-1980 period. You can unfortunately see that on TA where French members often have one foreign, Southern European parent or grandparent. Quebeckers were however quite homogeneous until recently. The native American admixture is most likely as high as that of Elisabeth Warren even though they love mentionning its existence.

Usually they are very much pure French whatever that is since they were isolated

They do have Native American ancestry according to DNA tests, but it's generally below 5%, so not really significant. Individuals with more than 10% Amerindian generally identify as métis instead of French Canadian even though there are some self-identified French Canadians with more than 10% and métis with almost none.
