Is the defining trait that Dinaricizes someone a certain nose shape? Is their more to being Dinaric than just the nose?

The Nose is the least important element.
(Dramatic pause)
1) Brachycefaly= Round headed otherwise guess what? It’s a Mediterranean.
2) face should appear, longer, nasal segment longer, face is more “hanging” than in the Alpine.
3) head is higher than alpine, especially at the back vertex
4) head back is shorter. So the distance between ears and rear of the head is < than frontal segment.
5) face shape is more typically Triangular or Hexagonal due to wide head, and narrow chin. However Slab faced and oval versions can be found.
6) eyes more typically narrow and highly placed. Eye lid often visible (however variants: Noric, Armenoid show different eye morphology)
7) Lambda and Occipital bone flat or ripid. Extreme planoccipatility like in Coon plates are rare today as they were artificially deformed.
8) nasal segment long, mouth and lower face often small
9) chin small, rounded and high
10) nose high rooted, often ripid, often long. Not always Convex that’s Coon&co using 80 year old examples.

This is the ultimate Dinaric according to Coon.(which we shouldn’t follow religiously but that had great insight)
