Why do people always choose to classify the same Spaniards? Do they find something interesting in these specific specimens?

Lol. No way. Nothing Amerindian.
Instead, she is quite Upper Paleolithic inspired.

To be mestizo it is not necessary to mix Amerindian + European.

But this term reffers to a mix of Amerindian and European.
In Portuguese "mestiço" is used for any race mixed individual, but the Castilian variety "mestizo" is specifically Euro + Amerindian, right?

In what Portuguese dialect? I use mestiço to Euro/Amerindian and mulato to Euro/African mixes.

Well, here in Brazil we use mestiço to any type of race mixed individual.
White and Amerindian mixes here are called caboclo.
White and SSA mixed, yes, we call it mulato.

Never heard the term caboclo being used here. I think we only use mestiço e mulato the way I explained above.

Of course, the only mixture of Mestizo in most Spanish Americans countries was Amerindian + Euro, but in countries like USA and Brazil mestizo was any combination of race.

''Mestiço'' here is mostly used to European + Japanese mixed individuals. Mulato for black + white (even if now there's a tendency in Brazil to classify all mulatos/pardos as blacks).
Amerindians are generally ignored. People mixed with them are generally included among ''pardos'' if they are dark skinned or ''whites'' if they are white skinned. Caboclos are being erased from Brazilian history.
