I would say italian keep their heritage better but it's just an impression.

English are very mixed but probably have a lot of people who are still 80%+ British Isles.

The more Catholic ethnic groups mix more, but they've been in the country for less time to do so. So called WASPs have often been mixed with small amounts of German, Huguenot etc since Colonial times. Protestants remain predominantly NW European, whereas Catholics are often unclassifiable Euromutts. The ethnic domination of many Protestant Churches (Lutheranism, Presbyterianism etc) is also a factor. The more rural geographically isolated ethnic groups (English, Scots-Irish, Scandinavians) also mix less than the urban ones (Irish, Italians, Poles etc).

I would say Polish Americans tend to marry among each other, youll find more full Polish Americans than Italian American, German Americans, English Americans etc
the ethnicities that I mentioned tend to be mix with other things, the Italian Americans tend to be the most mix imo, especially with black or hispanic
a lot of Italian Americans have a fetish for black women, youll see many of them dating black women

and since Italian Americans are considered the cool type of whites, many tend to claim that side a lot more
a black/Italian American mix person will most likely claim both sides or more his Italian side
but a black/German American mix person will most likely claim just being black, sometimes mix


Italian Americans are on top of the pyramid when it comes to cool whites
everyone would be okay with Italians in the hood

As was written above the religion seems to be bigger barrier than ethnicity.

They are mostly of Swiss German origin (https://en.wikipedia.org/wiki/Amish)
