Because being an Arab is not a racial identity. Tunisians are genetically predominately Berbers, and the Levantine genetic admixture in them is ancient, not recent.

I think they get high percentage of East Med+West Med on autosomal calculators. Also they get high percentage of Red Sea on K13 and their hg's are mostly E1b, J1 and J2 no doubt.

You are right, the big majority of Tunisians don't identify as Berbers, heck the Berber language doesn't even exist in Tunisia anymore only with a very small minority! Tunisians are also more mixed than Moroccans, Tunisians on average have higher Arab and European admixture than Moroccans.

I have read that there was also a big migration of turks during Modern Ages to Tunisia, and in a lesser way to Algeria.
Did it had any genetical-phenotypical impact in the country?
