On 23andme i have some full ashkenazi fourth cousins, and a lot of five/sixth cousins.

Hard to say. Do you have any idea which country your Jewish ancestor(s) were from?

Sephardic Jews are untested, so matches in this case can only mean Jewish, but you can not say if it is Ashkenazi or Sephardic

Sephardic is a broad "ethnicity", there are some real (expelled from Spain) Sephardi Jews that settled in the Balkans and Turkey, but they are a bit distinct that North African Jews (the old stock, Toshavim, mixed also with recent migrants from Spain, the Megorashim)
