From what I can tell, North Germans don't look much different from Dutch people and even Danes, whereas South Germans lean more towards France and Central Europe.

Yes, I wouldn't disagree with you. Been to the Netherlands a few times and the difference wasn't big at all. I've also been to Denmark (they are blonder overall and a light blonde isn't rare at all among Danes, more common than among Germans for sure) but still similar, even if maybe the difference is a bit bigger than between German and Dutch people imo.

Almost pure Alpine, with a certain Cro-Magnoid shade, IMHO.
