They match with French average (central French), so I'd assume they descend mostly from the Gauls, since none of these areas were Aquitanian in Antiquity. However, "The whole Western France, except northern fringes, show an Iberian lean. As you've said, as north as La Rochelle and even more northern people are closer to Iberians than to NW Euros." This could represent more Aquitanian ancestry throughout Western France and in French Canadians.

So my question is, do French Canadians (also Western French) descend from Gauls or Aquitanians?

What you say is false: the French in the southwest have an affinity to the Basque people, but overall they are closer to other French people from Poitou and Central France, than the Spanish.

The French in Languedoc have an affinity with the French in the Center more than the Basque, while the French in the south-east have an affinity with the Provencals, more than with the Spanish.
