-Guessing someone's ethnicity correctly is not a universal ability that is the same for everyone, it varies from person to person. It's a combination of innate ability to decipher facial characteristics combined with life experience and exposure.
-Not all demographics are equally good at guessing, once again it tends to vary. People who spend a lot of time on the internet(nerds) are more likely to be better at it, while people who are less knowledgeable about the world(like bimbos) will be a lot worse.
-These things are also dependent on fashion, behavior, demeanor etc. I think this is why a lot of people think I'm Arab as opposed to what I really am.
