How can I get estimates of the ancient populations my DNA comes from? For instance, how can I learn whether my DNA comes more from Romans than ancient Greeks, and whether I'm more Western Hunter-Gatherer or Early European Farmer?

You can get an approximate idea of all this by making models and calculators with the appropriate references, although they are still estimates.
For the second we usually use the Davidski Standard calculator (or whatever its name really is), and to discriminate the ancient Roman/Greek input in you, it would be necessary to make an specific model with a selection of references that reflect as well as possible what is considered to be a Roman and a Greek at a certain point in History (since both change according to the time).
And as always, do not take the results of a single model or calculator as irrefutable proof of anything, but rather observe all the results as a whole and through the trend they show, to get a rough idea of what they indicate.
