My family uses mostly beef and chicken. I notice pork and lamb meat are the two most commonly used in Greece, but I rarely see it used here except of course on holidays. Does my anecdotal experience sound accurate?

In Crete, pork and chicken, except in special occasions : goat, and lamb.

Would you happen to know for the mainland?

Pork and chicken. Lamb is more of an Easter thing. Fish is quite common too in summer.
