CHEATS RYE BREAD

2 parts rye flour
2 parts Spelt flour
1 part Strong white
Yeast
Olive oil 2 tablespoons per 500g flour
salt 1 teaspoon per 500g flour
Sugar 1 tablespoon per 500g flour
Warm water

Mix all the dry ingredients plus the oil together, then add yeast following the instructions on the packet, slowly add enough water to get a firm slightly sticky dough, kneed well at least 5 minutes (pretend it's someone you hate!)
Place in a warm spot until doubled in size, kneed again and then split into whatever you require, rolls, loaves etc and bake in a moderate 160C oven for 30 minutes for 400g loaves or 20 minutes for small rolls.


You can add all sorts to this I like one with lots of honey and a couple of handfuls of porridge oats
