HOLIDAY CAKE

75g butter
50g lard
450g self-raising flour
375g mixed dried fruit
100g soft brown suger
2 eggs
250ml milk (can be swapped for soya etc)

rub the fat into the flour stir in the other dry ingredients, mix the egg and milk together and mix everything together
put into a greased and lined tin (7inch round deep cake tin or anything the same size!) bake in a 160C oven for 1 1/2 hours but do check it after 1!

Apparently this keeps well, can't say I've ever found out!
