WTF? Why would 1/5 of the men in a West African country have Nordic Y-DNA?

Probably because only 5 people from Guinea shared their results and only 1 of them had haplogroup I1
There is no more mystery

Easy, brah. Some Portuguese mulatto from the Cape Verde archipielago must have had it, gotten to sire some children while on visit to the continent on slave raiding/trading activities, and the resulting griffe brood kept marrying local until the leftover Euro admix was bred out through the centuries up to the present.
