Other stunning movies which come in my mind:

1) "The pianist" by Roman Polanski
2) "Nightporter" by Liliana Cavani
3) "Lights in the Dusk" by Aki Kaurismaki
4) "Bram Stoker's Dracula" by Bertolucci
5) "The green mile" by Darabont
6) "Schutter Island" by Martin Scorsese

The last two ones stole my heart.

Indeed Se7en is a work of art and Morgan Freeman plays excellent same with Kevin Spacey.
People who thinks africans are inferior race should look at how Morgan Freeman plays,he is one of the best actors alive now.
American Beauty,I liked a lot that also, but is a very sad movie.

There's also Umberto Lenzi, Ruggero Deodato, Lucio Fulci
Kind of B-Movie'ish but still well worth watching imo.

Mario Bava's Diabolik was excellent.

More B-Movie madness (but highly enjoyable) would be to look out for anything starring Luigi Montefiori aka "George Eastman". Cani Arrabiati was a classic. He did some real B-movies in the 80's... a good laugh.

The first couple of series of TV Series La Piovra were awesome, worth catching those.

There's a lot of good Italian films I can think of, at least up until the 90's.

My all time faves and I say are the best:

True Grit (1969&2010). Two former Confederates, one turned U.S. Marshall another turned Texas Ranger set out bounty hunting. :D Can't remember if in the 1969 version the Confederate services were mentioned much, but Cogburn was always referenced as a Quantrill Raider. The 2010 version had a nice exchange between Cogburn and La Boeuf about whose service for the CSA was the better. :p
