I've been eating them since I can remember back in the 1950s and a little guy. My Mum would make them with white sauce sometimes for an extra treat but most times just egg wash and bread crumbs. In my travels I am surprised how many people have never ate them, some never heard of them and yet still some think it's a only movie title.
Is this an old timers food thing? Why the lack of FGT eaters?

BTW, just made and ate some for lunch with Jersey yellow super sweet COTC and shredded pork sammich.

The way I do them is find a tomato that is still green but just ever so slightly getting some red on it, this would be prefect but it's not absolutely crtical.

Cut into 1/4 (7mm) slices, dredge in flour (seasoned with salt and pepper please), into an wash of whisked eggs, you can use a dash of buttermilk mixed in here if you want, then dredge again in corn meal or Iti bread crumbs.
Pan fry in oil, I like olive oil, untill just golden brown then drain on some paper towels. Best when ate while still warm.

Optional white sauce is blonde butter roux with milk, salt and pepper, sometimes fresh grated Locatelli chesse.

Corn meal vs. Iti crumbs is a whimsical choice as both are good just different. Sauce vs. plain, same deal, there's no such thing a bad FGT unless you burn them.
