Her mother is apparently Greek-Cypriot, but I think she looks more middle eastern or even asian/Indian. She could even pass as being part black imo. I always assumed Jasmine was fully English, or maybe something like half Italian, though I think she could even pass as being Scandinavian when she isn't tanned.
