It's just who they are. Are you seriously having trouble differentiating between Nationality, Ethnicity and Race? Yes she's nationally Israeli, but ethnically she is Jewish (they're not a Middle Eastern ethnic group per se, at least not since the Israelites left Judea) and racially/genetically/microscopically she would most likely be, like most Ashkenazim, a half-European, half-Near Eastern hybrid.

The "Crusader DNA" argument was supplanted a long time ago. The gene flow wasn't extensive, and it wasn't on a large scale. Palestinians are overwhelmingly Middle Eastern in origin. Many Turks may have been "Balkanized", but most Turks aren't. One draws the line where European clinal intra-variation ends, which is where about Greece starts.
