How does the phased data on gedmatch work? Can someone please explain?

Basically a paternal phased data file will attempt to show you what you inherited from your fathers side for example. Basically it removes anything that you could not have inherited from your father and so the number of reference points used is slightly less, but i think it is a useful as a different way of looking at one part of your ancestry, like paternal or maternal side, to see what sort of variation there is within that known ancestry. Not a perfect explanation but afaik that is the general idea, i don't know much at all about the technical side of it if that is what you are interested in.

1 77.8% German (Dodecad) + 22.2% Egypt (Henn) @ 4.71
2 79.2% German (Dodecad) + 20.8% Yemenese (Behar) @ 4.92
3 78.5% German (Dodecad) + 21.5% Palestinian (HGDP) @ 4.93
4 78% German (Dodecad) + 22% Kurd (Xing) @ 5.1
5 79.4% German (Dodecad) + 20.6% Iranians (Behar) @ 5.11
6 77.2% German (Dodecad) + 22.8% Uzbekistan_Jews (Behar) @ 5.13
7 77.7% German (Dodecad) + 22.3% Kurd (Dodecad) @ 5.18
8 78.8% German (Dodecad) + 21.2% Lebanese (Behar) @ 5.19
9 79.4% German (Dodecad) + 20.6% Jordanians_19 (Behar) @ 5.35

But the weird thing is that my Middle Eastern ancestry is from my maternal side of the family, so why is it showing up for my paternal phased???

I don't know, although i knew using paternal phased data files with admixture calculators used to come with a bit of a health warning in one of Gedmatch's earlier iterations, as it is not as reliable as a proper kit. It is mainly used to see which matches you get through which side of the family, using their matching database.
